Fort Worth is Cowtown. It is also a city where most of the beef sold is trucked in from somewhere else entirely. Ours comes from an hour and a quarter northwest, off one ranch, and you can drive out and look at the pasture.

About 3–4 cubic feet for a quarter, 6–8 for a half, 13–16 for a whole. Have it cleared and cold before delivery day.
